The Research & Development Formula Specialist is responsible for new bread product formulation and with improving existing product formulas, and for planning and executing new product development.
*Background/Education Requirements:*
* Bachelor's Degree in Food Science & Technology or Bakery Science.
* Minimum 5 years of experience in food manufacturing R & D or technologist/specialist in the field.
* Bakery experience and knowledge with emphasis on bread products.
* AIB accredited or comparable.
HAACP Certification or Certified Food Scientist preferred.
*Essential Duties/Responsibilities: *
* Responsible for evaluating current product processes which would enable new product processes which would enable new product development and working with the R & D and the operations team to effectively develop new products that work within the production facilities current capabilities as well as recommend enhancements that would unlock additional capability.
* Ensures all materials and products that are used comply with local, federal regulations and comply with EPI Breads guidelines.
* Coordinates with the team to confirm compliance, documentation of changes, lead reformulation efforts on existing items to optimize, and will routinely conduct pilot or kitchen trials for sensory evaluation, parameter validation, among other important duties.
* Extensive collaboration with Sales, QA, Production, Purchasing, Inventory, Scheduling, and with EPI Breads leadership.
* Maintains the best quality products excellent customer service by maintaining required audits, Good Manufacturing Practices, Safety Standards,, OSHA, Environmental Compliance, as may be required by Plant , Company, Local, State and Federal mandates or programs.
*Recipe Development:*
* Will manage all formulation recipes and related forms required.
Ensure all data is stored in an accessible location.
Will keep track and document all changes, recommended, or implemented and next steps, for each item in the portfolio.
* Will develop formulas for all new items and review formulas of all existing items and make recommendations for changes when appropriate.
* This role will be a driving force in all plant test runs and pilot production runs.
* Perform regular testing and sensory reviews with office and plant staff.
* Have a working knowledge of bread formulas, ingredient interactions, and use this knowledge to effectively make trial samples (bench samples) in the most efficient and effective way possible.
* Work on existing product formulas to ensure quality standards are met and that all product specifications in the system are correct.
* Work closely with QA in the new product implementation process.
* Establish and maintain a solid working relationship with Production/Operations.
* Allergens are a part of the plant operation; therefore, it is critically important that the entire Plant Allergen Program is clearly understood, supported and adhered to.
*Ingredient Management:*
* Manage Raw Material vendor documentation
* Work with QA Manager on ingredient approval.
* Source raw materials for new products/items.
* Compile and record testing data and charts for ingredient performance, production test information, and other ongoing projects.
* Evaluate existing ingredients and do comparative analysis on regular basis with alternatives and provide results and recommendation that can improve product performance.
*New Item/and Projects:*
* Development of new products based on interaction with Sales/Marketing, which may include formula development or revisions, cost analysis,
* Adhere to specific timelines to test, evaluate and help commercialize products to meet a pre-determined launch timeline.
* Manage trials and make sure there are retention samples, evaluate shelf like.
* Work with production and QA to review specification targets and ensure production runs meet that for new items.
* Lead all plant trials and first production runs of new items and key projects.
